Cheddar bacon ranch chicken


I cooked up some bacon, then seared the chicken in the bacon grease. In a baking pan I brushed some ranch on top of the chicken, topped with cheddar cheese and bacon bits.

Cracker Crusted Chicken Fried Steak


Although this is a really good meal, I prefer to bread chicken fried steak in flour then egg then flour again. This one just wasn't as tasty.

What you'll need:
  • Cube Steak
  • 1 cup of flour
  • About 5 Saltine Crackers per steak
  • 2 eggs, beaten
  • Salt and pepper
  • 2 tbs grease 
Directions: 
  • Add salt and pepper to flour 
  • Dip steak in flour, then eggs, the crushed up crackers
  • Place in hot grease for 30 seconds on each side till crackers are crispy.
  • Then place in a baking pan and into 350 degree oven until meat is thoroughly cooked.

Tonight we made stuffed bell peppers!

I looked up actual recipes but none sounded appetizing to me. So I decided to make my own! :) I kinda just threw all of this together but it turned out delish!




What you'll need:
  • 1lb. ground beef
  • salt, pepper, garlic powder
  • 1 can of black beans
  • 1 can diced tomatos (or cut your own I didn't have any) 
  • 1 cup of minute rice
  • 1/2 onion, diced 
  • 1/4 cup ketchup, yes I said ketchup
  • bell peppers, obviously
  • sour cream
  • shredded cheese
Directions: 
  • Hollow out peppers and microwave for 5 minutes 
  • Cook ground beef, salt, pepper, garlic powder, onions, tomatoes, black beans, in a skillet.
  • Cook minute rice in microwave (1 cup rice to 1 cup of water) 
  • Add rice to meat 
  • Add ketchup 
  • Cook altogether for a few minutes
  • Spoon the mixture into Peppers 
  • Top with cheese
  • Put in 350 degree oven
  • Bake for 10-15 minutes or until cheese is melted
  • Top with sour cream 
  • Enjoy!

Easy Skillet Steak Recipe!

This was kind of a spur of the moment meal because I was running out of food. But it was AMAZING! My husband ate it for lunch the next day and the next. It can be healthy if you choose a non fatty steak such as a top steak. But you can use any thin steak you'd like.

What you'll need: 

  • Round Top Steak (or your choice) 
  • Onion 
  • Fresh sliced mushrooms
  • Olive Oil
  • Cooking Spray
  • Salt, Pepper. Garlic Salt

Directions: 

  • Slice onions into rings and add them to a sprayed skillet cook on high until translucent 
  • While Onions are sautéing cut steak into strips against the Grain
  • Season with Salt, Pepper, and Garlic Powder 
  • Remove Onions and place on a plate to the side
  • Spray the same hot skillet and add meat
  • Cook for 1-2 minutes or until mostly done on both sides.
  • Remove steak and place to the side with the onions
  • Add 2 tablespoons of olive oil to hot pan and add mushrooms
  • Sautee mushrooms for 30 seconds on each side
  • Add the onions and meat back into the pan and cook all ingredients together for a few more minutes.
You can serve this over rice, with pita or however you'd like! It's really delicious I don't think you could mess it up!

Someday we'll live in a little cozy house with a red front door. We'll sit on the porch in rocking chairs and drink sweet tea while our children play in the yard. They'll laugh and run from the dog. They'll cry when they fall down and you'll kiss their knees and bring them band-aids even though they're not bleeding. We'll grow old in this house. Together.

Recipe



Here in Germany it's been in the single digits to negatives for the past two weeks! Nothing makes me and my husband feel more at home than a warm pot of chicken and dumplings. I tweaked a few recipes I found online along with my grandma's recipe and came up with this scrumptious soup!

What You'll Need: 
  • 2 Large boneless skinless chicken breasts
  • One 32 oz. carton of chicken broth
  • 8 cups of water (you may need more depending) 
  • 2 cans of Pilsbury buttermilk biscuits
  • 1/2 cup of flour
  • 1 cup of cold water
  • Salt
  • Pepper
Directions: 
  • In a large pot add 8 cups of water and boil chicken until fully cooked. 
  • Shred Chicken
  • In the same pot add chicken broth, leftover water, and shredded chicken. 
  • Pinch biscuits into fourths and toss them in the pot
  • Boil for 20-30 minutes or until biscuits sink.
  • Combine 1 cup of cold water with 1/2 cup of flour and mix until there are no more clumps.
  • Slowly pour into the pot. (This will give it the creamy texture)
  • Cook another 20-30 minutes to get rid of any flour taste.
